Osage Orange Turning Question - turn green or wait?

I have an 8' log of Osage Orange (Beau Darc), 16" diameter, fresh cut. What's the best way to prepare it to turn collection plates for the church where it was cut down? Leave it as a log for months? Cut it in shorter lenghts and saw the cylinder in half? Or rough turn it now and put the rough turning in a chip pile until stable?
